Massaman curry comes from southern Thailand and differs from other Thai curries where Indian influences can be easily detected (it is distinguished by the addition of Indian spices such as cardamom, cloves and nutmeg). The paste has a unique and intense aroma. The high chili pepper content makes it quite spicy. It pairs well with coconut milk, brown sugar, or fish sauce. It's often added to chicken dishes, for example, to enhance the flavor of the meat.
